Cucumbers are a great food to help you cool down in these hot summer months…and here’s a great recipe!
Ingredients
4 cucumbers, peeled and sliced thinly into circles
1 big pack (or 2 cups) of So Delicious Coconut milk yoghurt, Plain flavour (Lindo’s Devonshire has this)
1 pack of fresh dill (aprx 4 tablespoons chopped), but dried dill might work as well.
Juice of 1 lemon
1-2 cloves garlic grated
½ teaspoon salt
¼ teaspoon pepper
Instructions
Peel and slice cucumbers and place into a big bowl. In a separate bowl or right in the yoghurt container, mix together everything else until you have a nice thick dressing. Dump the yoghurt sauce onto the cucumbers and stir. Enjoy! Stays fresh in the fridge for 3 days.
