The Simplest Borscht Recipe

Detoxifying, clean, easy to make, warming…and incredibly hydrating…

I wanted to share my recipe for The Simplest Borscht Ever with you!

It’s SO easy to make and SO delicious! And it helps us feel more grounded and balances our root chakra, which is so important! Your root chakra provides you with a base or foundation for life, and it helps you feel grounded and able to withstand challenges. It is responsible for our sense of security, stability and safety. Beets are a root vegetable and perfect for grounding us and helping us feel rooted, stable, secure.

Serves 8


  • 8 organic red beets, peeled and chopped in half, and all of the beet leaves (or 4 large ones)
  • 16-18 cups of water
  • 4 carrots, washed and sliced
  • 4-8 cloves of organic garlic, peeled and chopped
  • 2 onions, peeled and chopped
  • ½ bunch of organic or local kale (optional)
  • ½ bunch of parsley, chopped
  • 2 tsp Celtic sea salt or Himalayan salt
  • 2 tsp fresh cracked black pepper
  • A splash of balsamic vinegar (approx. 3 Tbsp)


Fill a large soup pot with 16-18 cups of water. Wash, peel and chop beets, beet leaves, carrots, kale, parsley and onions. Place all vegetables into your large soup pot, ensuring all vegetables are fully submerged. Add salt and pepper. Bring to a boil on high heat, then reduce heat to medium and cook for 1 hour, with pot lid cracked open a little bit to release steam. About 45 minutes in, add splash of balsamic vinegar. Adjust seasoning to taste. Serve hot. Store leftovers in the fridge. Freezes well.
